Here is the recipe that I found for delish Yorkshire puddings!
Ingredients:
2/3 cup of gluten-free flour mix
1/3 cup of corn starch or potato starch (we used corn starch)
½ teaspoon salt (or up to 1 teaspoon to taste)
¼ teaspoon gluten-free baking powder
¼ teaspoon xanthan gum
2-3 whole eggs
1 cup milk or half & half
Drippings from roast beef (or use vegetable oil)
Directions:
Preheat oven to 425F.
Mix all dry ingredients well. Beat eggs separately, then add to dry ingredients, mixing well with electric hand mixer. Finally, add the milk or cream and beat for a couple of minutes (should be the consistency of thick cream).
Pour a little beef drippings into each muffin cup. I use about 1 tsp, in each, you really just need to line the bottom of each cup for this to work. Then put the muffin tins into the oven and heat until the oil is VERY hot.
Distribute the batter evenly into the 12 muffin cups and bake at 425F for 15 minutes. If the puddings are well risen by then, turn the oven down to 375F and finish cooking them (should be about 5-10 minutes) You can tell by looking at them how moist they are. Just cook until they look right to you.

Woo Hoo Honeymoon
So we finally booked our honeymoon! We've decided to go to mexico, not my first choice b/c everyone seems to go there but it was in our budget! This is the resort we have booked in Playa del Carmen http://www.realresorts.com/Gran_Porto_Real/. We wanted all inclusive and right on the water. We upgraded to an ocean view. We found a tour company (http://www.yucatreks.com/chichenitza.htm) that does day trips around the area so we're going to go check out some Mayan ruins. Can't wait and just in time the weather dropped to -25 today. Thank you to the dear hubby who plugged in the car when I forgot to!
My fabulous brother in law send us a new slow cooker for Christmas. We cooked a roast in it yesterday and I attempted yorkshire pudding (gluten free!). The slow cooker did a great job but unfortunalty you get what you pay for and DH only paid $6 for the roast. A bit fatty. but the yorkies turned out great!

Newlyweds?
So I didn't really use the blog as a way to help friends and family for the wedding. Instead I used the template on theknot! oh well they all made it here and had a blast. Now we are in wedded bliss or so I think. yes it's wedded bliss!
So we're Newlyweds eh?
I have to be honest and say that married life isn't really much different than before. And how long are we considered "newlyweds"anyway a year a few months? I have to say that I am enjoying it and feel for some reason safer and more content. Don't know why but I just do.
Hmmm what have we been up to since "the big day"
We went to two weddings after ours, so much fun to see other women's wedding ideals. Ours was the best of course (I'm allowed it's my blog and our wedding! ). One in Saskatoon and one in Vancouver, since I had never been to either place it was lots of fun.
Our first Thanksgiving married was spent at above mentioned wedding in Vancouver. We had a nice quiet Christmas at home. We are lucky we didn't have family pulling us in all directions as the in laws are RVers now (and they are someplace warm) and my folks live back east.
We've joined a mixed curling league and our record is a steady no wins. But it's fun and something different to do for the long winter!
I've successfully made a gluten free lasangna (sp?) that both dear hubby and roommate enjoyed. It has been requested to be made again. woo hoo
Now that most of the crowds have left our home that is a vacation destination and it looks like we are getting some snow I'm hoping to go skiing soon. I didn't ski enough last season so I'm hoping to get out more. DH has been out at least half a dozen times and I am jealous.
I've made a new years resolution to quit smoking grrrrrrr. To help with that I have also given up coffee and cocktails and wine. double grrrrrrrrrrrrrrrrrrrrr. I know that these 2 vices are triggers for smoking so I am trying to give them up too.
next on our list of things to do now that we are married is get back to Banff. We are currently waiting on staff housing and should hear any day now.

New to this Blogging thing
So I started this blog to help family and friends plan their trip out west for our wedding next fall. Hopefully it's helpful in finding things to do, places to stay stuff like that. Now lets see if this works!
